Asian Salad with Orange Sesame Dressing

I believe that a good salad is an important addition to most dinners. Unfortunately it’s so easy to make a bad or boring salad that doesn’t bring much to the table besides undressed greens.  Fortunately it’s just as easy to bring a bright colorful salad that can be a focal point of your meal rather than an afterthought.

There are a few easy ways to step up your salad game.
1. Bring on the colors, different colors of vegetables, fruits, seeds, and nuts, bring on more flavor.

2. Make your own dressing. Not only does this mean you know what is going into your salad dressing, it also saves room in the fridge when you don’t have bottles and bottles of different dressings. Making the dressing or vinaigrette yourself means controlled amounts.

Making a vinaigrette is easier than it sounds, the most important thing is emulsifying your ingredients so they don’t separate and the flavors can really marry. I’ve found the easiest way to do this is to use a food processor or blender. Add all the ingredients except for the oil to the blender. Give the blender a good spin to mix the flavors, then while the blender is running, very slowly drizzle in the oil. This will make sure the oil is emulsified into the mixture and not sitting on top of the rest of the flavors.

 

I have served this salad with my Garlic Sirloin Skewers and with baked salmon, brushed with soy sauce, orange blossom honey, garlic, and salt. Both were crowd pleasers and I would make again anytime!

Asian Salad

Serves: 8-10 people

  • 1 head Romaine, sliced into strips
  • 1 head Red cabbage, sliced into thin strips
  • 1c Green onions, chopped
  • 3c Shredded carrots
  • 1bag Frozen edamame
  • 2-3 Oranges, peeled and sliced.
  • 1c Almonds, sliced
  • 1tbsp Sesame seeds

  1. Wash and dry all produce.
  2. Boil the frozen edamame for 3-5 minutes then drain and rinse with cold water. If the edamame is still in the pod, shell the edamame.
  3. Once the edamame is cooled, toss all salad ingredients together.

Orange Sesame Vinaigrette

  • 3tbsp Soy sauce
  • 1/4c. Rice vinegar
  • Juice of 4 oranges
  • 3tbsp of Orange blossom honey
  • 1/2tsp Garlic, minced
  • 1tsp Ginger, cut or minced
  • 1/3c Toasted sesame oil
  • Salt TT

  1. Add the soy sauce, vinegar, orange juice, honey, garlic, and ginger to a blender or food processor.
  2. Blend for about 30 seconds to mix the ginger and garlic in well.
  3. Start the blender and while running, slowly drizzle the sesame oil into the blender.
  4. Taste and then salt as needed, mixing well.
  5. Enjoy!
